Holy Week is a special time. To make it even more special, why not try these seafood recipes and make this Lenten season an even more memorable one?

Observing meat-less Fridays during the Lenten season can be more enjoyable than serving the usual traditional Filipino food thanks to fresh twists in cooking seafood shared by FisherFarms.

Relleno Dynamite
Take the all-time favorite “dynamite” or stuffed chili peppers, for example. The dish usually contains chili pepper, cheese, and sometimes ground beef or pork, which are then wrapped with spring roll or lumpia wrappers. For Lent, we can recreate this by substituting meat with delicious “rellenong bangus” (stuffed milkfish)!

To make this tasty, unique dish, you’ll need the Gourmet Baked Rellenong Bangus of FisherFarms.

Fisherfarms Relleno Dynamite (Serves 10) Est. cost per piece: P10

Cooking Time: 10 minutes

Ingredients:

  • 30 pieces green chili peppers (siling pang-sigang)
  • 1 pack Fisherfarms Gourmet Baked Rellenong Bangus 500g (filling only)
  • 6 cloves garlic, peeled and minced
  • ½ cup spring onions, chopped
  • 30 pcs lumpia wrappers
  • 180g cheese, sliced into sticks
  • Cooking oil

For Garlic Dip:

  • 2 tbsp mayonnaise
  • 2 cloves garlic, chopped
  • 1 tsp lemon juice
  • Salt and pepper to taste

Procedure:

  1. Make a slit on one side of each chili pepper. Remove the seeds, then rinse under cold water and drain well.
  2. Combine the Fisherfarms Gourmet Baked Relleno filling, garlic, and spring onion. Mix well and set aside.
  3. Insert 1-2 cheese sticks inside each chili pepper. Fill with relleno mixture and place on the wrapper.
  4. Wrap the filled chili in lumpia wrapper with the stem exposed. Seal with a dab of water.
  5. Deep fry in oil, 2 inches deep, for 2-3 minutes over medium heat or until wrapper turns golden brown.
  6. Serve hot with garlic dip mayonnaise mixture or sweet and sour sauce.

Smoked Milkfish Cream Cheese Sushi Roll

Cooking Time: 10 minutes



    Ingredients:

    • 2 cups Japanese style sushi rice, rinsed, drained 
    • 3 cups cold water 
    • 1/2 cup rice vinegar 
    • 8 sheets nori (fried seaweed) 
    • 1 pack Fisherfarms Smoked Deboned Milkfish Belly Cut 
    • 350g, skin off, sliced 
    • 80g cream cheese, cut into thin strips (1 inch thick) 
    • 1 1/2 pcs cucumbers, cut into strips (2 inches thick) 
    • Soy sauce, to serve 
    • Pickled ginger, to serve 
    • Wasabi, to serve 

    Procedure:

    1. Cook Japanese style sushi rice. Once rice is cooked, fold in rice vinegar using a wooden spoon. 
    2. Place 1 nori sheet on the bamboo mat. Use wet hands to spread 3/4 cup rice over the nori, leaving 1 inch space at the top and bottom part 
    3. Layer the Fisherfarms Smoked Belly, cream cheese, cucumber on top of the rice, about 2 inches from the edge closet to you. 
    4. Pick up on the edge of the mat and roll to enclose while holding the filling in place. Gently press the mat to shape and seal. 
    5. Use a sharp (slightly wet) knife to cut each roll into 6 slices. 
    6. Serve with soy sauce, pickled ginger and wasabi

    Aglio Olio Pasta with All Natural Fish Sausages
    Aglio Olio Pasta with All Natural Fish Sausages (Serves 6) Est. cost per piece: P10.83

    Cooking Time: 10 minutes



      Ingredients:

      • 1 lb pasta (spaghetti) 
      • 3 cloves garlic, minced 
      • 1/2 cup olive oil 
      • 1 pack Fisherfarms All Natural Fish Sausages 600g, sliced 
      • Red Pepper flakes 
      • Salt 
      • Parsley, chopped (for garnish, optional) 
      • 1/2 pc lemon, zested (optional) 
      • 2 tbsp Parmesan cheese (optional)


      Procedure:
      1. Cook Pasta as per packaging directions. Drain then set aside 1 1/2 cup of pasta water. 
      2. Combine the garlic, olive oil and Fisherfarms All Natural Fish Sausages in a large pan over low heat. Season with salt and red pepper flakes to taste. 
      3. Add the pasta and the pasta water to the garlic and sausage mixture. 
      4. Mix well then add parsley and lemon zest (optional). 
      5. Adjust seasoning according to taste. 
      6. Serve with parmesan cheese if desired.
